I have had some of people tell me that during the winter you need to just "spin" and not focus as much on your average speed but the amount of time on the bike. Because you dont want to peak to early. But I have noticed that people are doing interval work on the trainers and on the road during the winter. So what should I be doing?

Don't be afraid to use the search function. There are numerous threads on winter training.
Most people on this board tend to do effort over the winter, as re-training after de-training is just too hard and takes too long. Enjoy a fun, spirited weekend ride with your friends and do at least one mid-week ride with some unstructured work, that is if you feel burnout could be an issue.

Ride hard&happy! 😄 The most you ride, the stronger you're gonna be. NO DOUBT! If you catch overtraining don't worry, really you have to pass for here to know deeply your body and wich kind of efforts he can do.

It's well known that a change of activity is great, too. But I ask myself: the key of cycling is in my legs, so, I think the key of a good cycling preparation is hiking, running and cycling.See u!
