Oh, I just started going to this butcher shop close to where my husband
used to work. He would have to pick up large quantities of meat there
for his boss and never told me about it and never bought any for us. I
asked the checker about this corned beef I bought, as it was called
"lean" and wondered if it had to be cooked longer. She said no, and
after you cooked it you would feel like you died and went to heaven.
We did. Best corned beef I ever had!

What I have found out about going to butcher shops is that their meat
is of higher quality and not much more pricier than that at grocery
stores. I was able to buy some prime sirloin recently and that was
great. At Safeway I can buy about 2 types of ground beef. At the
butcher there is just so much more to choose from. I can buy lamb
fries if I want to (I don't want to). They smoke their own hams and
bacon and I will need some more of that bacon smoked with cherry wood.
I will also have to try that apple-smoked bacon.
