New seven speed bar ends may be hard to find. They are made for 9 and 10
speeds these days. Rivendell usually has them.

eBay is a good bet for finding a used 7 speed set. Do an eBay search and
you should turn up 15 sets or so which should include some seven speeds. If
you like friction shifting, which works nicely with bar ends, any of them
would do fine.
Another alternative might be thumb shifters. Thumbies are wonderful too.
