VO2Max is the maximum volume of oxygen you body can use, say, in one minute. You breathe a lot of air while exercicing, but only actually use a fraction of it. Oxygen being an important, and clean substrate, your performance level is somehow affected by how much your body can use.
You'll often see VO2Max expressed in Liters used per minute. It is also expressed in ml per kg per minute.
