Even though you asked a fairly simple question, would it be possible to be even more specific as to the context?
What do you mean by mature?
What do you mean by New to the sport?
What's the athletic back ground of this athlete?
Why would this athlete start doing Level 5 training?What I can tell you even before you answer these, is that more mature people than we would think, actually train near, or at VO2Max quite often. They do that through spinning session, without any particular progression, or structure in their program.

Mature would be adult, done growing.Riding for 3 years. Training with a plan a little over one year.
Weight training roller Hockey, generally active.
Systematically over the last year worked FTP, endurance strength and sprints. But no VO2 Max yet.
Looking to increase FTP and general race fitness.
I have not been to any spinnig classes but the few cyclops tapes I have seen get no where near 3-5 minute L5 efforts. Maybe other classes do.
I have generally used VO2 max training sparingly. My veiw is starting to change. But I don't want to go over board either. Hence the questions.
