I used orange juice in the brine instead of pineapple orange juice. Next time, I might leave out the OJ and try just water to see what the taste difference is. With OJ, the taste is fantastic, but I really can't taste any sweetness or orange flavor in the duck. I also made the wilted chard, which was quite good.

Costco sometimes carries half ducks that already have the wing tips and back bones removed and cooked. They just need to be heated and treated with some sort of optional sauce. I had them for dinner last night and there are leftovers enough that I will have duck for at least one lunch this week.

I've had the duck like that. They were good, too. I like this recipe better, but it's also more work.
My Costco had some for a little while but don't anymore. They do that with some yummy things, they had a precooked nuke and serve rack of lamb for a while that was simply heavenly.
