Very Easy Stuffed Green Peppers
2 green peppers
1 can of corned beef hash
1 can of diced tomatoes (with chiles or without)
Minute Rice
sliced or grated cheese to top of peppers
Cut tops off of two green peppers. Clean them; bring water to a boil in a
deep pot. Cook peppers for five minutes, turning a couple of times. Chop
the tops and save to add to the sauce. Stuffing: one can of corned
beef hash. A tall can or a short can easily fills two peppers. Put a
can of diced tomatoes (with chiles or without) in bottom of baking dish,
add enough Minute Rice to make a thick sauce. Top the sauce with the
stuffed peppers, add sliced or grated cheese to top of peppers. (at this
point may refrig and cook later) Cover dish tightly with foil and cook
for 30 to 45 minutes until stuffing is hot. Serves two hungry people!!!
