I hesitate to post this, because then people will ask for recipes, and those
take a lot longer to post... most of these you could probably find by
googling old posts of this group.
Anyway, I eat a lot of veggies. During times when I have had my best weight
losses, it has been when I was eating more veggies. I generally cook big
quantities, and then take leftovers from dinner for my lunch the next day or
3 to work. I find it's easier to get my veggies in if I can prepare meals
around the veggies. Here are some of my favorite things to cook:
Szechuan chicken & broccoli
Pepper Steak
Veggie stir fry w/ chicken/shrimp/steak
Lasagna made w/ strips of baked zucchini slices in place of the noodles
Shephard's Pie w/ smashed cauliflower in place of mashed potatoes
Pot Roast made in slow cooker with lots of veggies added
Zucchini Pasta - served w/ sausage or pasta toppings (Slice zucchini finely
using a vegetable peeler, saute in oil... use as pasta)
Egg Drop Soup
Antipasto Salad w/ lettuces, salami, olives, etc.
steamed veggies topped w/ cheese & grilled chicken strips
Eggs Foo Young (chinese-type stirfry w/ lots of cabbage, cooked in scrambled
eggs)
I also like the cauliflower pizza crust (w/ toppings) that was recently
posted here.
