Fresh pineapple
1/4 cup honey
2 Tbsp. butter
1 tsp. cinnamon
Combine honey, butter and cinnamon. Pare and cut fresh pineapple into
long wedges. Grill over medium heat 15 minutes basting with sauce. Turn
frequently.
Fruit Pizza
1 cup flour
1/4 cup (each) cornstarch, sugar
1/3 cup margarine
Combine; cut margarine in as for pie crust; add 1 beaten egg with fork
until all ingredients are moistened. Coat pizza pan with Pam and press
dough into circle on pan; bake 400 degrees for 8 to 10 minutes until
lightly browned; cool on baking sheet for 10 minutes then carefully
remove to wire rack to complete cooling. Place pastry on serving platter
and arrange fruit attractively on top--spoon glaze over fruit; refrigerate
at least 1 hour before serving. Cut into 10 slices (170 calories).
Fruit:
1 cup (each) sliced fresh strawberries, peaches, kiwi
1/2 cup seedless grapes, halved
1/4 cup fresh blueberries
2 sliced bananas
1 cup fresh pineapple tidbits
Glaze:
1 Tbsp. cornstarch
1/4 cup water
3/4 cup orange juice
1 Tbsp. lemon juice
1/4 tsp. lemon rind
Combine first 3 ingredients in pan, stirring until blended; bring to a
boil and cook over medium heat 1 minute, stirring constantly; remove from
heat; add lemon juice and rind; cover surface with waxed paper and cool.
Stir Fried Pineapple
1/2 of a fresh pineapple
2 to 3 stalks celery
1/2 lg. onion
1 clove garlic
2 sm. or 1 lg. tomatoes
1/2 to 1 lb. lean beef
1 Tbsp. soy sauce
1 Tbsp. vegetable oil
Salt
Sugar
Black pepper
Slice fresh pineapple into 1 x 1 inch pieces. Slice celery about 1/3 inch
thick. Slice onion (cut in half) then in quarters. Cut tomatoes in
quarters or smaller. Slice lean beef real thin. Need a large wok or pot.
Chop garlic real fine. Heat up wok on high temperature. Add 1 tablespoon
oil. Add garlic (after oil is hot) until brown (light). Add meat, soy
sauce. After meat is cooked, add celery, onion and pineapple and tomato.
Stir fry all vegetables until a little cooked, then add tomatoes, sugar,
black pepper and salt according to taste. Serves 4 to 6 people. May use
beef or chicken breast.
