    I have a case of Marinated Artichokes. Is there anything you can do with
    these besides using them on anitpasto or salads? Are they used in any
    recipes?

    I use them in a lot of dishes
    add them to chicken
    I make a potato salad with them added in
    they are great in dips

    Artichoke Appetizer

    2 Small Jars of marinated artichoke hearts
    1/4 cup mayonnaise
    1/2 cup Parmesan . cheese
    paprika (to taste - I put about 1 table spoon)
    cayenne pepper (to taste - I put about 1/4 teaspoon)

    Chop up artichoke hearts and mix with other ingredients
    Put in an oven safe bowl and bake 350 for 20
    minutes

    Marinated Mozzarella And Artichoke Hearts

    1 (9 oz.) container fresh Mozzarella cheese balls in water, drained or 1 (8
    oz.) pkg. Mozzarella, cubed
    1 (6 oz.) jar marinated artichoke hearts
    1/2 of a 7 oz. jar roasted red peppers, cut into 1 x 1/4 inch strips
    1/2 tsp. each dried rosemary leaves, crushed and crushed red pepper
    1/8 tsp. salt
    Mix all ingredients together, chill at least one hour.

    I have been making these since the 60's

    Artichoke Nibbles

    2 (6 oz.) jars marinated artichoke hearts
    1/2 cup. chopped onion
    1 clove garlic, chopped fine
    4 eggs
    1/4 cup. bread crumbs
    1/4 tsp. salt
    1/8 tsp. pepper
    1/8 tsp. oregano
    1/8 tsp. Tabasco sauce
    1/2 lb. (2 cups.) sharp cheddar cheese, shredded
    2 Tbsp minced fresh or 1 Tbsp dried parsley

    Drain marinade from 1 jar of artichokes into fry pan, drain the other jar
    and discard the marinade. Chop all artichokes, set aside. Add onion and
    garlic to fry pan, saute until onion is limp. In bowl, beat eggs well; add
    bread crumbs, salt, pepper, oregano and Tabasco, then stir in cheese,
    parsley and artichokes. Turn into a greased 7x11 inch pan. Bake in preheated
    325 degree oven for approximately 30 minutes. Serve warm.

    Greek Island Chicken With Marinated Artichokes

    1 tablespoon olive oil
    4 boneless chicken breasts, skinned
    1 onion, chopped
    4 garlic cloves, finely chopped
    8 ounces mushrooms
    1 cup white wine
    8 ounces bottled marinated artichoke hearts
    1 ounce sun-dried tomatoes, dry-packed coarsely chopped
    1 1/2 ounces Greek olives, pitted, halved
    1 teaspoon lemon-pepper seasoning
    1 teaspoon honey
    1/4 teaspoon salt
    1/2 teaspoon oregano
    1/2 teaspoon cinnamon
    2 1/2 ounces feta cheese, crumbled
    4 lemon wedges or lemon slices
