you can only train in the time that you have available, and it must be realistic. there's little use in say, finding an 1.5hrs for training everyday when that's *all* the spare time you have. after a few weeks, you'll be really hacked off.
make sure you have time to do other important stuff, which would include partner/family time, relaxation, TV, etc.
as regards the actual time you've stated, the 2 x 1-hr is fine. i use this approach with one of the riders i coach. sometimes the 1-hr ride is easy recovery, other times it's steady, or other times it's full on intervals, which is plenty of time for that sort of work.
