I'm planning a tour of Spain starting this Spring for 6 weeks or so. I want to buy a book so I know what I need to take (currently planning on taking the bare minimum - only a rucsac).

Oh absolutely, skip the book, save the money and just look at the lists folks put up at this site or others. It is really straightforward and easy. If you have the money to eat in restaurants the whole time and stay in hotels, even easier.
I would advise you to skip the rucksack and get proper painniers as a decent investment or borrow them from someone.
What you might look for instead is a fun cycling book or maps on good places to visit in Spain, just to keep your interest up and to keep you dreaming of biking while it is a dreary winter.
