Last week when I cooked the tilapia somebody suggested using
tomato/capers... so I did it tonight instead.
- Cauliflower cheese with a crispy cheese crust and a sprinkling of
panko crumbs for extra crispness
- and the fish. I sauteed an onion, a sliced leek, a small green
pepper, and a teaspoon of garlic... then I dropped them into a baking
dish and laid the half-thawed fillets on top of them. The sauce was
simple - I thawed out two yoghurt-cups of tomato sauce from the
freezer, added half a jar of baby capers, a generous amount of hot
sauce, some balsamic vinegar and some seasoning. Then I poured it over
the top of the fish.
- both baked at 350F for half an hour, then I turned it down to 300
for half an hour, then I turned the oven off because DH wasn't home
yet.
- Served with a simple green salad - sliced mushroom, lettuce, and
alfalfa sprouts. YUMMY!
