  1. Tom's Southern Hamburger Pie

2 Tablespoons olive oil 1 medium onion, chopped 1 pound ground chuck salt and freshly ground pepper
to taste 1 teaspoon paprika 1-9 inch frozen pie shell 5 slices Velveeta, (about 4 to 5 ounces)
1 (16.3 ounce) can flaky biscuits ( like Grands)

Preheat oven to 400 degrees. Heat the oil in a large skillet on medium high and cook the onions
until soft and translucent, about 4 minutes. Add the beef breaking up the lumps with the back of the
cooking spoon and cook until no longer pink, about 5 to 7 minutes. Drain any excess fat and stir in
the salt, pepper and paprika. Fill the meat mixture into a prepared frozen pie shell and evenly
distribute the slices of Velveeta over the top. Separate the biscuits and layer them in the circular
pattern over the pie, covering it completely. Cut a few small "steam slits" into the top and bake
for 15 minutes until golden brown and hot.

    Yield: 4 servings
