I found beef arm roasts on sale for $1.37/lb this week.
Planned to make jerky from same, but found lots of fat
and gristle. Much better for pot roasting. Jerkified the
first roast (they were about 3 lb per), but tossed the
other two with the jerky marinade and pot roasted
slow and low. Smells great, but may be a little salty
- will have to go easy on salt in the side dishes. Will
freeze portions of these smoky chipotle roasts for
pulled beef recipes and thin & thick slices.
Next I wanted a nice cool pasta salad, with more
veggies than pasta, and got to thinking about
dressing - aha! I pulled a little jar of that cilantro
(&garlic!) pesto from the freezer, dug out a couple
tablespoons and added a splash of rice vinegar.
Mmm good. Not bad at all, at all.
