Please excuse my ignorance, but what exactly does 700x32C means? Those are the tires that are on my hybrid bike. Is it possible that I switch to, let's say, 700x23C tires without having to switch to another set of rims?

"700" and the "C" indicate the nominal size of the tire. It means the tire is meant for a 700C rim. The bead diameter for 700C is 622mm. The 32 is the nominal width of the tire in millimeters (mounted on a rim and inflated). I said nominal because many tires aren't exactly as wide as the label indicates. There may also be a marking on the tire in the format "xx-yyy" where xx is the width in millimeters and yyy is the bead diameter in millimeters (e.g. 32-622).
You may be able to switch to 700x23C but I would bet that your rims are too wide to work well with such a narrow tire. If your rims are 20mm wide (outside width), then a 23mm tire will work. But if they are 22mm or wider, I recommend going wider than 700x23C
