i know every part has its limit but why now have a wheel at 160psi? most places i look have recommended pressures that are a hair above 100 or so.

In ideal conditions like a perfectly smooth wooden surface on an indoor velodrome you can get lower overall rolling resistance by pumping up your tires rock hard. Some track riders racing on surfaces like that pump their tubular tires up close to 200 psi. But real world rough roads make it tougher and above some tire pressure which varies with road surface roughness, rider weight, tire size, etc. you'll get bounced around so much that the theoretical rolling resistance advantages are lost. So most riders ride road tires at pressures in the 100-120 psi range although I still know a lot of racers that insist on running tires a lot harder in hopes of going faster.
