  1. Tiramisu Waffles

    ~Topping~
    1 Tbsp instant coffee granules
    1/4 cup milk
    8 oz pkg cream cheese, softened
    1/3 cup powdered sugar
    1/2 tsp vanilla

    ~Waffles~
    3 eggs
    1/2 cup granulated sugar
    1/4 cup vegetable oil
    2 oz unsweetened baking chocolate, melted
    1-1/4 cups milk
    2 cups all-purpose flour
    2 Tbsp baking cocoa
    1 Tbsp baking powder
    1/4 tsp salt
    1 oz semisweet baking chocolate, grated

    In small bowl, dissolve coffee granules in 1`/4 cup milk. In medium
    bowl, beat cream cheese, powdered sugar and vanilla with electric
    mixer on medium speed until well blended. Beat in milk mixture until
    well blended.
    Heat waffle iron; brush with vegetable oil if necessary (or spray with
    cooking spray before heating). In large bowl, beat eggs, granulated
    sugar, oil and melted unsweetened chocolate with wire whisk until
    smooth. Beat in 1-1/4 cups milk, the flour, cocoa, baking powder and
    salt just until smooth.
    Spoon about 1/2 cup batter onto center of hot waffle iron. Close lid
    of waffle iron.
    Bake about 4 min or until steaming stops. Carefully remove waffle.
    Repeat with remaining batter. TO serve, spoon 1 heaping tablespoon
    topping and 1 tsp grated semisweet chocolate onto each waffle.
