    The corn dog was first introduced at the Texas State Fair in 1942. Legend
    has it that two brothers, Carl and Neil Fletcher, were responsible for the
    first corn dogs. The brothers saw a Dallas street vendor selling hot dogs
    coated in cornmeal batter that were baked in molds shaped like ears of
    corn. They decided to put the hot dogs on sticks, dip them in batter and
    deep fry them, which would make the process faster and the treat more
    convenient to eat.

    Texas State Fair Corn Dogs

    3 cup corn meal
    1 cup flour
    2 Tbsp. sugar
    1 1/2 tsp. baking powder
    1 tsp. salt
    2 Tbsp. lard (melted)
    3/4 cup milk (room temp.)
    1 egg slightly beaten
    About 15 weiners
    Lard for deep frying

    Place weiners in boiling water while mixing the batter. Combine corn meal,
    flour, sugar, baking powder, salt, grease, milk and egg: Mix well ( almost
    the consistency of cornbread ) and let set. Put a wooden skewer in the end
    of each weiner and dip in batter, let excess run off. Deep fry at 360 F,
    keeping the dogs submerged in hot grease 4-5 minutes until golden brown.

    Variation: For A Little Texas Heat Add 1 tsp. cayenne pepper to the batter
    mix. or Add 2 Habanero peppers (finely chopped) to batter mix.
