These are very tasty if you would like to try a different kind of
flavor with ribs. Also, nice if you want or need to do the ribs in
the oven.

Terry's Best Ribs
Recipe By: Terry Pogue
1 rack Ribs -- pork
1 tablespoons Kosher salt
1 teaspoons Black Pepper
1 whole Orange
3 tablespoons Hot paprika -- Spanish preferred
Preheat the oven to 275F Rub the salt, pepper, and hot smoked paprika
into the ribs. Zest the orange and sprinkle all of the zest over the ribs.
cut the orange in half and squeeze the juice over the ribs. Use the juiced
orange half to rub all the ingredients well into the ribs. At this point
you can hold overnight in the fridge if you like. Place ribs in the
preheated 275F oven, meat side up for 2 1/2 hours.
Recipe Notes
I really like Spanish Hot Smoked Paprika but I am sure you can use
other types.
Here's an alternative I must try.
These are the best ribs in the world. I know. I've tried them all. There
is a BBQ joint in heaven and it has one thing on the menu. This
is it.
1 rack of pork baby back ribs per moderately hungry person. Marinate
in cider vinegar about 10 minutes. Liberally use garlic salt and
canned black pepper Use hickory, oak, or mesquite At 200-225, they
should take
2 1/2 hours
Use a water pan. Sauce goes on the side. (You won't need it.)
That's it? Yep. Don't mess with perfection. Don't try fresh cracked
pepper or cloves of garlic. Don't try spare ribs. I did once and made
my wife cry.
