  1. Dave Smith posted a (sort of) recipe for "Mango Chicken" a little while
    back... Calls for "mango" chutney, and I have been wanting to try it for
    a few weeks. Anyhoo, I couldn't find any mango chutney but I had peach
    chutney, so I used that instead LOL - it still turned out delish 🙂

    Here's my version of his recipe, if anyone wants to try it:

    Title: Mango (Peach?) chicken

    Ingredients
    ---
    4 chicken breasts
    1 red pepper sliced
    1 medium onion chopped
    2 green (spring) onions
    1 cup heavy cream
    1 tbsp red wine vinegar
    1 tbsp Dijon mustard
    1/4 cup mango (peach) chutney
    50 g butter

    ---
    Instructions
    ---

    Salt and pepper chicken breasts and sauté in butter. Remove chicken
    and keep warm. Add one sliced red pepper and one medium size cooking
    onion (chopped) in the butter until soft, then add about 1/4 cup of
    mango (peach) chutney, 1 Tbsp each of Dijon mustard and red wine vinegar
    and 1
    cup of heavy cream. Stir until slightly reduced and a nice sauce
    consistency.
    Return the chicken to warm in the sauce and garnish with chopped green
    onion.

    (I also made some basmati rice to go with it)
