  1. Swiss Steak

    Recipe By :Janet Wilder
    Serving Size : 2
    Preparation Time :1:20

    1/2 lb round steak
    1 Tbsp cooking oil
    1/4 cup all-purpose flour
    1 tsp salt
    1 tsp black pepper
    1 med onion -- sliced
    1 can stewed tomatoes -- 15-16 oz
    1/4 c dry red wine
    1 Tbsp Worcestershire sauce
    1 Tbsp garlic powder
    1/4 tsp dried marjoram

Mix flour with salt and pepper. Spread flour mixture on a board. Heat
oil in a non-stick skillet that has a lid. Cut the meat into four
serving-sized pieces. Dredge the meat in the flour mixture and pound
with a meat mallet. Turn over and pound the other side. Place floured
meat in the skillet, cover and brown well on both sides, about 4 minutes
on each side. Place sliced onion on top of meat. Cover with stewed
tomatoes. Add wine, Worcestershire sauce, garlic and marjoram. Stir
and cover. Simmer gently for 1 hour or until meat is fork-tender.

NOTES : Use a quality brand of tomatoes as they are an important part
    of the dish.
    Serve with mashed potatoes.
