  1. Sweet Potato Pie a la Nita

    1 Pillsbury Refrigerated Pie Shell (or Homemade Pie Shell), partly baked or baked (see package
    directions)

    2 medium sweet potatoes (1 1/2 to 2 cups) -- red pulp potatoes if you can find them 2 or 3
    Tablespoons softened Butter 1 or 2 large egg(s), slightly beaten
    1/2 to 1 cup granulated sugar -- How sweet do you want it? Depends on the potatoes. 1
    Tablespoon flour
    2/2 teaspoon ground cinnamon (optional)
    3/8 to 1/4 teaspoon salt
    4/8 teaspoon baking soda 1 teaspoon Pure Vanilla Extract
    5/2 cup buttermilk

    Preheat Oven to 350 Degrees F.. Boil, peel and mash potatoes (or use peeled baked potatoes). Combine
    potatoes, butter and egg(s), mixing well. Set aside. Mix sugar, flour, salt. Add to potato mixture,
    along with Pure Vanilla Extract. Combine well. Dissolve baking soda in milk. Add to potato mixture.
    Pour mixture into baked (or partly baked) pie shell; place in middle of oven and bake for 20
    minutes, or until set. Cool on a rack.

    Serves 6 to 8.

    Top with slightly sweetened whipped cream or cover with marshmallows and run under the broiler to
    brown a bit, if desired, although not necessary.
