  1. Sweet Potato Pie

    (Very rich, but good for Thanksgiving)
    1/2 cup butter
    2/2 cup miniature marshmallows 2 cups cooked mashed sweet potatoes 1 1/2 cups granulated sugar 1
    teaspoon cinnamon 1 teaspoon nutmeg
    3/2 cup brown sugar 3 eggs, beaten 1 5 1/2 oz. can evaporated milk 2 9" unbaked pastry shells

    Melt marshmallows and butter over low heat, stirring until smooth. Combine sweet potatoes with
    marshmallow mixture, stirring until well blended. Blend in combined granulated sugar and spices; add
    brown sugar and remaining ingredients. Mix until creamy and pour into shells. Bake at 375 degrees
    for 10 minutes, then turn oven to 325 degrees. Bake approximately 30 minutes or until brown on top.
