  1. Sweet Potato Pecan Bites

    1 cup ground pecans
    1-1/2 lb fresh sweet potatoes
    1 cup light brown sugar
    1/2 cup water
    1 Tbsp white sugar
    1 Tbsp ground cinnamon

    Boil sweet potatoes until soft; cool, peel and puree. Combine white sugar and
    cinnamon, mix well and set aside. In a heavy bottom saucepan, dissolve sugar in
    water over medium heat, stirring constantly until it forms a thick syrup. Add
    pecans and yam puree and keep stirring until the bottom of the pan is visible.
    Remove from heat and beat mixture until it cools. Once it is cool enough to
    handle, form mixture into small balls. Roll each ball in cinnamon sugar and
    place each in a paper candy cup, if desired.
