  1. Sweet Potato Casserole

    Hello,
    Read your post. I think I have what you need.

    3 cup mashed sweet potaotes
    1 cup sugar (I use brown or a combo of white and brown)
    2 eggs
    1/2 cup milk
    1 Tbsp vanilla
    1/2 cup (1 Stick) butter (or margarine)

    Topping:
    1 cup light brown sugar
    1/3 cup flour
    1/3 cup melted butter
    1 cup chopped pecans

    Mix together the potato ingredients and put in Pam sprayed casserole dish.
    Mix topping ingredients. Crumble over top of potatoes. Bake 35 minutes at
    325.

    **For the record - I use more potatoes than 3 cups- usually at least 8
    good size ones. I always forget the vanilla. Just give them a taste
    before you put the topping on. We don't like them too sweet. I cook them
    until the topping is light brown and crusty.If you use the 3 cup amount of
    potatoes I'd start with 1/2 cup sugar and go from there.
    I've made them so many times, I don't use the recipe much anymore. I
    didn't have milk the last time I made these so I used 1/2 and 1/2 cream.
    The recipe is pretty forgiving.
