    1 lb chicken breast or pork 2 egg yolks 2 Tbsp cornstarch 1

    pineapple chunks (more or less) 2 Tbsp water 1 Tbsp
    cornstarch

    Cut the meat into bite size pieces. Try to keep them about
    the same size. Mix meat together with the egg yolk,
    cornstarch and soy sauce. Cover and marinate in the
    refrigerator for 15 minutes or more.

    Heat the oil to 350-375 deg F. in a wok or deep fryer. Drain
    moisture from meat and dredge thoroughly with cornstarch.
    Make sure the pieces aren't stuck together. Deep fry in
    batches until cooked through (about 3
    1/2 - 4 minutes). Allow the oil to reheat between batches.
    [At this point you can either finish the dish or store the
    cooked meat in the refrigerator until needed.]

    Combine the sugar, water, pineapple juice, vinegar, ketchup
    and salt. Prep the garlic, onion and green pepper for stir-
    frying. Stir-fry garlic, onion and green pepper in a wok [or
    just use a big frying pan]. Add meat, pineapple chunks and
    sauce. Mix and heat thoroughly. Increase heat until sauce is
    boiling. Combine water and cornstarch, add to wok and stir
    until sauce thickens. Remove from heat and serve
    immediately.
