I purchase a whole store bought pepperoni - for pizza-one week ago
instead of my usual sliced package brand that went straight in the
fridge. Had it in the refrigerator in a zip locked baggies till I
noticed it was turning hard so now it's sitting on my kitchen counter.
Does whole pepperoni need to be refrigerated or is safe just to leave
out on counter in a baggie & for how long.

ThanksProperly made whole pepperoni will keep indefinitely without
refrigeration; but maybe not in a plastic bag.Bob

Then it's not really pepperoni. Or it *doesnt* require refrigeration
but some fercocktah lawyer made them put it on the label anyway, "just
in case".Pepperoni, by definition, is a variety of fermented cured dry salami.
It is acid enough, dry enough, and is sufficiently full of nitrites (and
a little nitrate) that it does not require refrigeration.Best regards,
