I can make various types of stock, but one I've never found a fully
satisfactory answer to is a brown stock (with no meat and no msg
cubes). Any suggestions welcome!

Use browned onions for a base but don't cook it for hours--vegetable stocks,
unlike meat-based stocks, "sour" when cooked too long. Are you a vegetarian,
is that why you don't want to use browned meat?

Yes, and the other stocks I make dont quite replace a traditional
brown stock. Thanks cat.
