You'll see cantilevers on bikes with STI levers because those levers don't pull enough cable for v-brakes.

Nope. They're too skimpy on cable pull. If you set your brake pads close enough to the rims so that they'll work, you won't be able to release the brake to remove the wheel.
The most common solution is to use Travel Agents to double your cable pull.
