I know that from your stem to your bars, there's generally a 26mm or 31.8mm clamp, but was wondering if there's a difference in diameters where your stem connects to your headset, or if there all the same

There can be a difference but it is becoming more rare. Some older bikes can use a 1" headset, but these are usually threaded and use 'quill' style stems. Most stems these days are a 1 1/8" diameter

Threadless use either 1 1/8 or 1 (slightly rarer). Quills for threaded headets are either 1" or7/8".

Thsnx for the help, atleast I now dont have to buy a new headset as well as stem and bars to suit my new aero bars
