Steamed Cod with Rappi & Linguine
Serves: 4 Active Time: 25 min
2 pkgs (12 oz each) Rappi
3 Tbsp Oil, divided
2 cloves Garlic, thinly sliced
1 1/2 tsp Lemon Pepper Seasoning, divided
4 cod fillets (about 6 oz each)
1 pkg (12 oz) Tricolored Linguine (Dairy Dept), prepared per pkg
directions, drained
1 jar (16.5 oz) Vodka Sauce, warmed
You'll need: Steamer basket
Toss rappi with 2 Tbsp basting oil, garlic, and 1 tsp lemon pepper
seasoning; layer in bottom of steamer basket. Drizzle cod with remaining 1
Tbsp basting oil. Season with remaining 1/2 tsp lemon pepper seasoning;
place on top of rappi. Heat 1 inch water in large, heavy pan on HIGH to
rapid boil. Water must be hot enough to create steam below food, but must
not touch it. Place basket in pan; cover with tight-fitting lid. Steam
8-10 min until cod has reached internal temp of 130 degrees. To check
temp, lift lid away from face (use extreme caution and avoid steam) and
insert thermometer into thickest part of fish. Carefully remove from heat;
let rest at least 2 min. Toss pasta with warmed sauce. Top pasta with cod
and rappi.

witht Chunky Marinara.
