Not that I can afford an SRM right now but I have been surfing and can't find any SRM cranks for triples do they make such a thing? I think my bike is more useful with a triple.

AFAIK, the only triple that SRM has ever made was their mountain bike crank. Unfortunately, however, the accuracy of this model is somewhat suspect, apparently due to the fact that the 3rd chainring is considerably off-axis relative to the powermeter itself, and/or the greater distance that the data must be transmitted (requiring, for one thing, an extra/more powerful magnet to activate the crank).
Have you consider going compact instead?

I have considered that but Sheldon Brown advised agianst it saying it would make my bike less useful he is probably right considering my 2.5 watt/kg FTP. Maybe if I raise my FTP enough the need for a triple will disappear. Is that why most of the racers are using doubles?

The other thing that would make the SRM less useful for you is that I think once you dip below a cadence of 40 the crank stops sending data to the CPU until the cadence goes up again. This happens to me a lot on my MTB and cross bikes, YMMV, but since you are looking for a triple and your FTP is 2.5 I assume this will happen to you.

I think if you work out the numbers you can get an equally low gear with the SRM FSA compact crank. It is relatively inexpensive to have several cassettes for different courses and it's quick and easy to change (even when you want to change it overnight for two different courses in a stage race). Just set up your drivetrain to attain your preferred cadences. I went to a compact crank for a target hillclimb event 14 months ago, thinking I would switch back to my standard crank after the event. My standard crank is still in the box.
