  1. Spinach - Onion Quiche

    1 (9 inch) unbaked pie shell
    1 (10 oz.) pkg. frozen chopped spinach
    1 lg. Spanish onion, chopped (2 c.)
    1 lb. bacon
    3/4 c. grated Swiss cheese
    3 eggs, beaten
    1 cup milk
    1 tsp. salt
    1/8 tsp. pepper
    Dash of nutmeg

    Bake pie shell until partially done at 375 degrees, about 7 minutes. Peel
    and chop onion. Cook bacon in skillet until crisp. Drain on paper towel.
    Crumble. Add onions to bacon drippings in skillet and saute until soft but
    not brown. Cook spinach according to package directions, omitting salt.
    Drain thoroughly, squeezing out excess moisture. Layer onion, bacon,
    spinach, cheese in partially baked pie shell. Combine eggs, milk and
    seasonings - pour over quiche. Bake at 375 degrees for 35 to 40 minutes
    until knife comes out clean. Let stand 5 minutes.
