  1. What is there is milk which tempers hot, spicy foods on the
    digestive system? I read something about that recently;
    whereas most people tend to reach for a glass of water,
    actually, milk is what they should be drinking (assuming, of
    course, they can handle "dairy"😉..

    Capsaicin, which is what makes peppers hot, is soluble in
    fat but not water, so water won't remove much of it from
    local spots of irritation, but milk with even small amounts
    of fat will.

    We USED to have a Chinese here that described dishes by
    "stars" as far as hotness.

    A "3" was Very Hot, & about my upper limit. A few dishes
    rated a "4", & those my husband could handle, but barely.

    For fun, we tried their ONE "5" just once, and it was
    impossible. Even my husband, who hates to waste food, left
    it behind. I doubt even a quart of milk would have helped!
