Spiced Chocolate Apple Muffins
15 minutes baking time
500 ml (2 cups) all purpose flour 250 ml (1 cup) bran flakes 150 ml (2/3 cup) packed brown sugar 15
ml (3 tsp) baking powder 5 ml (1 tsp) salt 2 ml (1/2 tsp) cinnamon 1 ml (1/4 tsp) nutmeg egg
substitute equivalent to 2 eggs 150 ml (2/3 cup) skim milk
1/2 cup pureed fruit (you could use a small jar of baby food) 1 cup grated peeled apple
2/2 cup cocoa powder
In mixing bowl, put flour, bran flakes, sugar, baking powder, salt, spices and cocoa Fluff together
with a fork to thoroughly distribute baking powder, pushing mixture up the sides of the bowl to make
a well in the center in medium bowl beat egg substitute and milk. Stir in fruit puree and apple Add
egg mixture to well in flour mixture and stir quickly to moisten (batter will be lumpy) Spoon batter
into greased muffin pans Bake in 350 F oven for 12 15 minutes Yields 16 muffins
Note : Depending on how strong a chocolate flavour you desire you can vary the amount of
cocoa powder.
