  1. Spelt Applesauce Cake

    I have made this many times. I usually serve it with a hard sauce on
    the side. Very good. Very impressive for a wheat-free dessert. Could
    substitute wheat flour if you're not allergic to wheat. I've done this
    several times too.

    1/2 cup butter
    1 cup brown sugar
    3 eggs
    2 cups whole grain spelt flour
    1 1/2 tsp baking soda
    1 Tbsp + 1/2 tsp baking powder
    1/2 tsp sea salt
    1 1/2 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/2 tsp ground all spice
    1 1/2 cups applesauce
    1 cup raisins
    1/2 cups chopped walnuts or other nuts

    Preheat oven to 350 degrees F. Spray a 9 X 13 baking pan with
    nonstick cooking spray. (Or use bundt pan. This is what I used last
    time.)Cream butter with fork until soft and smooth. Add brown sugar and
    mix. Add the eggs one at a time. Set aside.
    Combine flour, baking soda, baking powder, all spices. Stir to mix.
    Alternatively add small amounts of the flour mix and the applesauce
    to the butter mix stirring until a batter is formed. Fold in the
    raisins and nuts, pour into pan.
    Bake for 40 minutes or until cake is golden brown and toothpick
    comes out clean. Cool before cutting.

    Hard Sauce
    1 stick (1/4 lb) butter melted.
    1 cup confectioners sugar
    1 Tbsp to 1 oz. Brandy or cognac or even rum.

    Melt butter. Mix in sugar and then cognac. I usually use a blender to
    mix it all. If you mix it in a bottle, makes it easy to transport and
    store until serving.
