Special 7 Layer Mexican Dip
Beans:
1 16 oz. can refried beans
1 Tbsp. ground Cumin
2 tsp. chili powder
Guacamole:
2 large ripe avocados
1-2 cloves garlic, minced
2-3 Tbsp fresh salsa
1 Tbsp mayonaise
Lemon or lime juice (add a little to keep from turning brown)
Combine all
1/2 cup sour cream
1/2 cup fresh salsa
1 1/2 cups shredded cheddar cheese
1 cup shredded lettuce
1 can sliced black olives
4 green onions, chopped
To make beans, combine all ingredients in a saucepan and heat while
stirring, until all ingredients are thoroughly mixed. Cool the beans in
the fridge while making guacamole. When beans are cooled down, spread in
the bottom of a 9x11 baking dish or similar sized tupperware. Make sure
beans are cool... hot beans will stick to your spoon! Top with guacamole,
then add remaining ingredients in order listed. Serve with tortilla chips.
Serves 4-6.
You may want to make 2-3x this amount for a large potluck, as this is sure
to go FAST!
