Back in January I ordered some dry soybeans, both black and white, from
Diamond Organics. I finally got around to making some soup with the white
ones and it's quite good. Had a ham bone to start with, made it like
regular bean soup, it took somewhat longer to cook, I soaked the beans
overnight. They still are more firm than regular beans but taste good. I
see on their website they are out of the dry black ones--which are twice the
price of the white ones.
