What is the rule for an OPENED carton of soymilk? How long will it keep in the fridge? I heard that bacteria could accumulate to nasty levels after four days on opened milk even if the expiration date is much later.
Is this a fact?
Can someone clarify? Judging from the other posts, I know that there are people here who are qualified to respond.

When I checked, my carton said that it was good for 7-10 days after opening. It was Westsoy brand, fwiw.

Consider what it is. It is a mixture of carb protein water and fat, a suitable bacterial breeding base. Hence its limited storage time. I wouldnt go past 4 days myself, its pointless.

If my experience is any indication (and with multiple brands, not just Westsoy), it will last almost twice as long as that -- maybe longer, though I tend to toss it if I've had it longer than about 3 weeks. It still smells OK, it tastes OK (well, not discernibly different than freshly-opened soy milk), and I can't recall ever getting sick from it.
