Southern Fried Chicken
1 frying chicken, cut up 2 tsp. Salt 2 tsp. ground pepper 2 tsp. Cayenne pepper (optional if you
like it Hot) 2 tsp. garlic powder 2 cups all purpose flour 6 large. eggs, beaten 1 1/2 cups lard
In a big bowl mix all the seasonings with the flour. In another big bowl, beat the eggs and place
the chicken in it. Take the chicken out of the egg wash and roll it in the seasoned flour until
completely covered. Let it set there a few minutes while the grease gets hot. In a large skillet,
get the grease very hot. Shake off excess flour on the chicken. Sprinkle with additional salt and
pepper to taste. Fry the chicken in very hot grease for 2 minutes, to trap the moisture in. Reduce
the heat to medium and fry until golden brown ( fry a little longer if you want it extra crispy).
Serve with Cole slaw, Mashed potatoes, pinto beans and hot buttered cornbread. Wash it down with a
ice cold glass of tea with a wedge of lemon on the edge.
NOTE: You can do the same thing with round steak. Good eaten!!
