I cooked the way I do not usually cook tonight. I did not hold back
or go for "healthier" alternatives.
Collards:
Rendered some side meat, and threw in some sea salt, peppercorns and
vidalia onions. Mixed in the collards until they were all cooking
down and moist. Then added water and vegetable stock. Cooked for ten
minutes - nice and tender, but not slimy. Still had their leafy
texture.
Grits:
Cooked grits until just about ready then threm in an inch and a half
thick piece of butter and a handful of cheddar cheese. Stirred until
grits had an even consistency.
Chicken:
Soaked some skinless chicken in buttermilk for 12 hours. Thook out
and covered with a dry mixture of flour, paprika, thyme, pepper and
sea salt. Fried until turning mahogany (about ten minutes or so a
side.
Biscuits:
Well, I don't make biscuits - my wife made those and they were
excellent.
Watermelon:
Sliced it!
