Don't know where the SigOther found this one...but it is for
Mango-Black Bean Salad. It calles for canned black beans,
but I suppose an equivalent amount of home made black beans
would do ( I can't get canned beans here)
Mango & Black Bean Salad
To preserve its sheen you can add a dash of salad oil.
Ingredients:
3 mangos 3 cans black beans 1 red onion
1/2 cup cilantro 1 lime salt to taste dash of oil if
desired
Serves 6
Preparation:
Peel and cube mangos.
Rinse black beans, chop onion and cilantro.
Mix all ingredients, add juice of lime, and salt to taste.
Refrigerate 2 hours before serving

Malia's Mango Jam
Recipe By : Malia Stone
3 cups mangoes -- ground 2 tablespoons lime juice -- or
to taste 1 package pectin -- powdered 3 cups sugar
Wash fruit, peel and seed.
Mash with a potato masher or run through a food processor or
blender. Do *not* puree!
Pour the mango pulp and the lime juice into a large saucepan
and stir in the pectin.
Bring mixture to a boil, stirring often.
Add the sugar. Stir to dissolve and let the mixture come to
a boil again.
Boil for 1 minute and remove from heat.
Continue stirring and skim foam off for 5 minutes more.
Ladle the hot fruit into sterilized jars leaving 1/2" space
at the top. Seal with paraffin.
I don't like the paraffin method, I plan on using the water
bath per the Ball Blue Book.

MANGO ICE CREAM Don't know where the Sig Other found this
one either or the Mango Bread that follows!
2 cans (13 ounces each) evaporated milk 2 cans (14 ounces
each) condensed milk 1 can (1 pound) mangoes, mashed ( pulp
and juice) 2 cups water
Combine ingredients. Pour into freezer container and freeze,
using 8 parts ice to 1 part salt.

MANGO BREAD
2/2 cup butter or margarine
3/2 teaspoon grated lemon rind
4/4 cup sugar
5/3 cup ripe mangoes, mashed 1 egg
6/4 cup white seedless raisins
7/4 cup sour milk 1 teaspoon baking powder
8/2 cup pecans or walnut chopped
Cream together butter or margarine and sugar. Add egg and
sour milk. Sift together dry ingredients and add to egg
mixture; mix. Add lemon rind, mangoes, raisins and nuts.
Bake in a loaf pan at 350 degrees F for about an hour. Cool
well before cutting.
