1/2 Cup Honey 4 Cups All-Purpose Flour
2/4 Cup Irish Whisky Or Buttermilk 1 Teaspoon Salt ----Glaze---- 1 Teaspoon Baking Soda 2
Teaspoons Irish Whiskey
3/4 Cup Buttermilk -- Chilled 1 Cup Raisins Or Currants -- Optional
BREAD: In large bowl, combine flour, salt and baking soda. With pastry blender or two knives, cut in
butter until mixture resembles coarse crumbs. Stir in raisins or currants (if using). In separate
bowl, combine buttermilk, honey and whisky. Add all at once to dry ingredients; stir just until no
dry spots remain. Turn dough out onto lightly floured surface. Knead lightly 1 minute (too much
handling will toughen loaves, while too little will inhibit rising.) Divide dough in half and shape
each half into an 8 in (20 cm) round. Place in two greased 8 in (1.2 L) round cake pans. With
floured knife, cut a cross 1/2 in deep in each loaf. GLAZE: In small bowl, combine whisky and milk.
Brush loaves with glaze. Bake in 350F (180C) oven 35 to 40 minutes or until loaves sound hollow when
tapped on bottoms. Remove from pans; let cool on wire racks. Cut into wedges.

Irish Soda Muffins

Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------
1 cup Quaker Oats -- uncooked (quick or old-fashioned) 1 cup Buttermilk or sour milk* 1 Egg
1/3 cup Margarine or butter -- melted
2/4 cup Brown sugar -- firmly packed 1 cup All-purpose flour 1 tsp Baking powder
3/2 tsp Baking soda
4/2 tsp Salt (optional)
5/2 cup Raisins
Combine oats and buttermilk; refrigerate 1 hour or overnight. Heat oven to 400 F. Grease 12 medium
muffin cups or line with paper baking cups. In large bowl, combine egg, margarine and brown sugar;
mix well. Add oat mixture alternately with combined dry ingredients to egg mixture, mixing just
until dry ingredients are moistened (batter will be slightly lumpy). Stir in raisins. Fill prepared
muffin cups 2/3 full. Bake 20 to 25 minutes or until golden brown.
*NOTE: To make sour milk, place 1 tablespoon lemon juice or vinegar in glass measuring cup. Add
enough milk to equal 1 cup; mix well. Let stand 10 minutes.

6 cup All purpose flour 2 tsp Baking soda 2 tsp Baking powder 3 tbsp Cornstarch 2 tsp Sugar 1 tsp
Salt 2 1/2 cup Buttermilk *** -----ADD FOR "SPOTTED DOG-----
1/2 cup Raisins or sultanas
*** may substitute 2 1/2 cup water and 10 tablespoons buttermilk powder.
Preheat Oven to 375 degrees.
Add all of the dry ingredients in a large bowl and mix very well. (If making Spotted Dog variant,
then add raisins.) Pour all of the buttermilk into the bowl at once and stir, using a wooden spoon,
just until a soft dough is formed. Do not try to make it smooth at this point. Pour the contents of
the bowl out onto a plastic counter and knead for a minute or so until everything comes together.
You may need to add a bit more flour depending on humidity. The dough should be smooth, not sticky.
Divide the dough into two portions and shape each into a round loaf, pressing the top down a bit to
just barely flatten it. Place the loaves on a large ungreased baking sheet. Sprinkle some
additional flour on the top of each loaf and, using a sharp paring knife, make the sign of the
Cross in slashes on the top of each.
Allow the loaves to rest for 10 minutes and then bake on the middle rack of the oven for 40
minutes, or until the loaves are golden brown and done to taste. Cool on racks. Adapted from: The

2 1/2 cups all-purpose flour (2 1/2 to 3 cups) 1 teaspoon baking soda
3/4 cup buttermilk
4/4 cup Sue Bee Honey
5/3 cup margarine OR
6/3 cup shortening 1 tablespoon caraway seeds
7/2 cup raisins
Mix together flour, baking soda and caraway seeds in large bowl; cut in margarine until mixture
resembles coarse crumbs. Stir in raisins. Add buttermilk and honey to flour mixture; stir to make
soft dough. Turn out onto lightly floured surface to knead 1 to 2 minutes, or until smooth. If dough
seems too dry, add a little more buttermilk. If it seems too sticky, add a little more flour. Shape
into flattened round ball and place on greased cookie sheet. Brush top with additional milk and cut
an "X" in the top with a sharp knife. Bake at 375 degrees for 40 to 50 minutes, until golden brown
and crusty.
