Skate wing recipe please

  1. Anyone have a recipe? I have had them at Greek restaurants with garlic
    potatoes, I'm sure the wings were dredged through flour. Thinking about
    experimenting, but if someone has a recipe I would greatly appreciate it!

    You can use any scallop recipe - skate wings are often substituted in
    dodgier restaurants.

    I've always lightly dredged them with seasoned flour, and shallow fried. The
    small wings are better, and they should be absolutely fresh. If they are at all
    stale they smell of ammonia, so theres no doubt about it!
    I live on the coast (U.K.) and so get locally
    caught fish.
