We live in central Spain and have a house available to rent in the Sierra de Gredos. This is great cycling and mountain biking country. The Vuelta regularly comes through the Gredos and there are three or four 1st Category climbs - Serranillos, Mijares etc.

If you want to get your legs in shape then a few days based at 1400m is just what you need!
