Shoyu Chicken
Chicken
1 cup of soy sauce
1 cup sugar
1 cup of water
slice in ginger root
This is an easy recipe to do and scales well if you have a large pot. I had
it many times when I lived in Hawaii and just made a large batch last
weekend. Chicken, I use legs. You can remove the skin if you want. Put the
chicken in the pot. Add 1 cup of soy sauce, 1 cup sugar and one cup of
water. slice in ginger root. Bring to a boil and reduce to a simmer until
the chicken is done. For larger quantities just keep adding soy, sugar and
water and more ginger until the chicken is covered. You can make this
ahead and put in the fridge. The sauce will thicken when cooled and you can
easily skim the chicken fat from the top. Serve over rice.
