I want to switch a pair of shocks from one bike to another. Is this do-able? And if so, what types of things do I need to take into consideration, and where do I look to find more info on how to do this.

What exactly are you talking about here, moving a fork, a rear shock, both, or something else?

Moving a fork is usually doable, fork/headset/frame interface is fairly well standardized. There are some combos that won't work though, like fitting a fork that's been cut down for a small frame on to a big frame for example.
Rear shocks are probably a different matter, due to a bigger variation in setups and frame interface.

Are the dimensions really the same on the donor bike as on the receiving bike? Do you have the tools needed for a controlled disassembly? Do you have the skills and tools needed to make sure that nothing falls off at a critical point afterwards?
Some locknuts (and similar) are only meant to be used once. If you have them, keep replacements handy.

Look for installation descriptions from the shock supplier. Moving a shock from one bike to another would contain pretty much the same tasks as fitting it to a bike in the first place.
