  1. I'm putting a bike together with some old, but unused XT drivetrain
parts but I'm not sure if they will work together.

The rear hub is a 7spd FH-M732 (from 93). The crankset is an FC-M750
(from 99) and the outer chain ring is marked 'Mega 9 drivetrain'.
Deraillieurs and shifters (7spd) are also 99 XT.

It looks like I'll need an HG70 cassette, but I'm not sure what, if
any, chain will work. Any advice will be welcome!

7spd XT shifters from 1999? Don't think so, XT went 8spd in 1994
    latest.

Anyway: things will work with the shifters defining which chain and
cassette to use. If the shifters are 7sp or 8spd you'll need any
Shimano 7spd cassette and a 7/8sp or 9spd chain. If the shifters
    are 9sp shifters you'll need the smaller 8 sprockets of a 9spd
cassette and a 9sp chain, or look at the alternative cable routing
at http://sheldonbrown.com/dura-ace.html to make your deraillieurs
    shift 7/8spd with a 9spd shifter.

If 7s or 8s, use an 8s chain, like a Sram PC-48..it'll work fine.
