Easy Shepherd's Pie

1 lb ground meat of your choice 1 package beef gravy mix, or 1 cup from a jar or leftover 1 can
creamed or regular corn, peas and carrots, basically the vegetable(s) of choice 2-3 cups mashed
potatoes (instant is okay, but this is a great recipe to use leftovers in)
Brown the beef. Prepare the gravy and mix it with the beef in a casserole dish (I use a 10" round
one so that it's a little deeper than a regular baking pan). Pour the vegetables over that, and then
dollop the mashed potatoes on top and spread to cover. Bake until hot through, about 20-30 minutes.
This is like pizza: you throw in/on whatever you want. Grated cheese in the mashed potatoes is a
wonderful addition, as is garlic. If you're using ground turkey, you can use turkey or chicken
gravy, etc. Or you can use frozen broccoli and cheese sauce (thaw first) in place of the other
canned vegetables. Not particularly authentic, but always tasty.
